Who Needs Certification

Every food establishment in Carrollton that handles open food must have a Certified Food Manager (CFM) on duty during all operating hours. The CFM oversees daily food service operations and ensures safe food handling practices are followed. 

All other staff (i.e. kitchen staff, wait staff, host/hostess, cleaning staff, etc.) must complete Food Handler Certification within 30 days of being hired. 

Purpose of Certification

Certified Food Managers are trained to identify and control food safety risks, prevent cross-contamination, and maintain safe food temperatures. Their role supports Carrollton’s goal of keeping food establishments in compliance with local and state health codes.

How Long Certification Lasts

Food Manager Certifications are valid for five years from the date the course is completed. Keep a copy on file at the establishment and renew before it expires.

Approved Course Providers

Certification must come from a course approved by the Texas Department of State Health Services (DSHS) or accredited by the American National Standards Institute (ANSI). Both organizations ensure training meets Texas food safety standards.
